Veal Chops With Pear Relish And Spinach - cooking recipe

4 None small pears, peeled, cored, coarsely chopped
1 None medium red onion, peeled, coarsely chopped
1 1/2 tbsp butter
1 tbsp red wine vinegar
1/4 cup firmly packed brown sugar
4 None cloves
1/4 tsp ground allspice

4 (7 oz) veal chops
3 1/2 tbsp butter
14 oz baby spinach
Preparation

To make the pear relish, bring pears, onion, butter and vinegar to a boil. Reduce heat and simmer, covered, for 20 mins, or until pulpy. Add sugar, cloves and allspice. Stir over low heat until sugar dissolves then bring back to a boil. Reduce heat and simmer, stirring occasionally, for 20 mins, or until thickened slightly.
Oil a grill pan or large frying pan and place over high heat. Cook veal chops until browned on both sides and cooked to your liking.
Meanwhile, melt butter in a large saucepan over medium-high heat. Cook spinach, tossing, until just wilted.
Serve veal chops with spinach and pear relish.
