Peppered Steak With Squash Fries - cooking recipe

Ingredients
    4 (6 oz) lean beef steaks, 1 inch thick, at room temperature
    1 tbsp coarsely ground black pepper
    1 large pinch dried rosemary or oregano
    1 lb winter squash, peeled, deseeded, cut into thick French fries
    1 tbsp olive oil
    None None steamed green beans, to serve
Preparation
    Preheat oven to 425\u00b0F. Line a baking tray with foil. Toss squash in oil and arrange on prepared baking tray. Bake for 20 mins, turning occasionally, until golden and tender.
    Meanwhile, pat steaks dry with paper towels then coat in pepper and dried herbs. Brush a grill pan with oil and place over high heat. When just beginning to smoke, lightly salt steaks. Cook for 3 mins then flip over and cook for 2 mins, or until cooked to your liking.
    Serve steaks with squash fries and steamed green beans.
