Sausages With Borlotti Beans And Mashed Potatoes - cooking recipe
Ingredients

1 tbsp olive oil
8 None thick sausages
1 None large onion, finely chopped
3 cloves garlic, minced
1 (13.5 oz) can chopped tomatoes
1 (13.5 oz) can borlotti beans, rinsed, drained
1 cup beef stock
1/4 tsp dried oregano leaves
2 1/4 lb potatoes, peeled, chopped
1/2 cup heavy cream
3 1/2 tbsp butter, chopped
2 tbsp fresh flat-leaf parsley leaves, chopped
Preparation

Heat oil a large pan. Brown sausages on all sides then remove from pan and let cool slightly. Slice thickly. Return sliced sausage to pan and brown on both cut sides. Drain on paper towels.
Reserve 1 tbsp fat in pan, drain remainder. Cook onion and garlic over medium heat until onion softens. Add tomatoes, beans, stock, oregano and 1 cup water. Return sausage to pan and simmer, uncovered, for 10 mins, or until thickened.
Meanwhile, cook potatoes in boiling salted water until tender. Drain. Mash with cream and butter until smooth. Season.
Sprinkle sausage mixture with parsley and serve with mashed potatoes.
