Tomato And Mango Salsa - cooking recipe

Ingredients
    1 tin (425ml) mango
    500 g tomatoes, seeded and diced
    250 g spring onions, sliced
    5 tbsp olive oil
Preparation
    Pour the mangoes through a strainer and drain well. Reserve the juice and finely dice the mangoes.
    Mix the tomatoes, scallions, 6-8 tbsp of mango juice and the olive oil. Season to taste and gently stir in the diced mango. Pour into a large jar.
