Bourbon Chicken Wings - cooking recipe

1 cup firmly packed brown sugar
2/3 cup bourbon
1/3 cup soy sauce
1 piece (2 inches) ginger, peeled and finely grated
2 cloves garlic, crushed
1 tsp Chinese five-spice powder
3 lbs chicken wings
Preparation

Combine sugar, bourbon, soy sauce, ginger, garlic and five-spice in a large bowl, stirring to dissolve sugar.
Place chicken wings into a large resealable plastic bag. Pour in three-quarters of the marinade; reserve remaining marinade. Seal bag; massage marinade into chicken. Refrigerate for 3 hours or overnight, to marinate.
Preheat the oven to 400\u00b0F. Line two baking pans with foil. Drain chicken from marinade and arrange on pan. Bake for 20 mins.
Brush chicken with reserved marinade. Return to oven for a further 10-15 mins, turning halfway, until dark golden and cooked through.
