Onion, Pepper And Spinach Frittata - cooking recipe
Ingredients

2 None onions, finely sliced
1 tsp smoked paprika
10 None large eggs, lightly beaten
3 cups baby spinach
8 oz roasted red peppers, cut into strips
Preparation

Spray an 8 inch non-stick frying pan with cooking oil spray and heat on medium. Cook onion for 5 mins, stirring, until soft. Stir in paprika. Remove from pan and set aside.
Wipe pan clean, spray with cooking oil spray and heat on medium. Add eggs and season to taste. Scatter over one-third of spinach, pushing lightly into egg with a wooden spoon. Top with onion mixture and peppers. Cook for 5 mins. Meanwhile, preheat broiler on medium.
Place pan under broiler and cook for 5 mins, or until frittata is set. Scatter with remaining spinach to serve.
