Chorizo And Bean Quesadillas - cooking recipe

Ingredients
    8 (8 inch) flour tortillas
    1 (15 oz) can refried beans
    1 link cured chorizo sausage, thinly sliced
    1 None green pepper, finely chopped
    9 oz grated Cheddar cheese
    3/4 cup fresh cilantro leaves, plus small sprigs to serve
    4 cobs corn, husk and silk removed
    1 1/4 cups chunky tomato salsa
    1/3 cup light sour cream
Preparation
    Spread beans over 4 tortillas. Top with chorizo, pepper, cheese and cilantro. Top with remaining tortillas and press to flatten.
    Lightly coat a frying pan with oil and place over medium heat. Working with 1 quesadilla at a time, cook quesadillas for 2 mins per side, or until cheese melts and quesadilla is golden. Cut into wedges.
    Place corn on a microwave-safe plate and microwave on HIGH (100%) for 4 mins, or until just tender. Cut cobs in 1/2 and season. Divide quesadilla wedges and corn between serving plates. Sprinkle with extra cilantro. Serve with salsa and sour cream.
