Cherry Streusel Cake - cooking recipe

Ingredients
    250 g butter
    600 g cherries
    2 tbsp cherry jam
    500 g plain flour
    200 g caster sugar
    1 tsp baking powder
    1 medium egg
    1/2 bottle bitter almond oil
    75 g amaretti biscuits, chopped
    1 tbsp icing sugar
    None None lemon balm, for decoration
Preparation
    Preheat oven to 400\u00b0F. Melt the butter and allow to cool slightly. Mix the cherries with the jam.
    Mix flour, sugar, baking powder and a pinch of salt in a bowl. Add the egg, almond extract, and melted butter and mix into a crumble texture.
    Lay 2/3 of the crumble on the base of a 9 inch springform pan. Spread the cherries on the base, combine the chopped amaretti with the remaining crumble and sprinkle on top. Bake on the bottom rack of the oven for 40-50 minutes.
    To serve, remove from the pan, dust with powdered sugar and decorate with lemon balm.
