Lamb Burgers With Chili Potato Salad - cooking recipe

Ingredients
    12 oz ground lamb
    1 (2 inch) piece lemon grass, shredded
    2 None kaffir lime leaves, shredded
    1 None small red onion, chopped
    1 None red chili, seeded, chopped
    1 tbsp fish sauce
    3 oz green beans, trimmed
    3 tbsp olive oil
    8 oz new potatoes, scrubbed and halved
    1 1/2 cups baby plum tomatoes
    3 oz firm goat cheese with rind, halved and sliced
    4 cups arugula
    4 tbsp sweet chili dipping sauce
Preparation
    Mix first 6 ingredients and shape into 4 burgers. Chill for 30 mins.
    Cook green beans in boiling water for 3-4 mins. Drain and set aside. Heat oil in a pan. Cook potatoes for 12-15 mins. Add tomatoes and cook for 2-3 mins. Transfer to bowl and add beans. Preheat grill to high. Grill burgers for 5-6 mins each side. Top with cheese and grill for an extra 1-2 mins to melt cheese.
    Add arugula and half the chili sauce to salad. Place salad and burgers on plates and serve with remaining chili sauce.
