Haloumi, Green Bean, Lentil And Baby Spinach Salad - cooking recipe

Ingredients
    7 oz haloumi cheese, torn into bite-sized pieces
    7 oz green beans, trimmed
    3 tbsp extra-virgin olive oil
    1 tbsp lemon juice
    2 tsp coarse grain mustard
    2 None shallots, finely chopped
    1 can (15 oz) green lentils, drained and rinsed
    2 oz baby spinach leaves
Preparation
    Preheat the oven to 450\u00b0F. Place the haloumi and beans on a lightly greased baking pan
    Bake for 10-12 mins, until haloumi is golden.
    Meanwhile, place the oil, lemon juice, mustard and shallots into a large bowl and whisk to combine. Add the lentils, spinach, haloumi and beans. Toss to coat in the dressing. Season with salt and black pepper and serve.
