Pesto Beef Pitas - cooking recipe

Ingredients
    1 large zucchini, sliced lengthwise
    12 oz thin-sliced sandwich steaks, trimmed
    1 tbsp olive oil, plus additional, to drizzle
    4 None pita breads
    1/3 cup sun-dried tomato pesto
    1/2 cup shredded mozzarella cheese
    1/4 cup loosely packed basil leaves
    None None Balsamic glaze, to drizzle
Preparation
    Preheat the oven to 425\u00b0F. Line 2 baking pans with parchment paper.
    Preheat a grill pan on high heat or preheat grill to medium-high. Grill the zucchini slices for 1 min each side, until tender and light grill marks appear.
    Brush the steaks with oil and season to taste. Grill for 30 seconds each side, to sear.
    Spread one side of each pita bread with pesto. Arrange the bread in a single layer on the prepared pans. Top evenly with zucchini and beef. Sprinkle with mozzarella and season to taste.
    Bake for 8-10 mins, until the bottoms are crisp. Sprinkle with the basil then drizzle with balsamic glaze and additional oil to serve.
