Ingredients

1 litre vegetable oil, for frying
1 kg potatoes, peeled and cut into chips
None None Salt, to serve
Preparation

Heat oil to 275\u00b0F. Add potatoes, working in batches, and par-cook for 5-6 mins then remove.
Increase heat to 325\u00b0F. Re-fry the potatoes, working in batches, for 4-5 mins until crisp and golden. Sprinkle with salt and serve.
