Turkey With Bacon, Celery And Sage Stuffing - cooking recipe

2 None medium onions, 1 cut into wedges, 1 finely chopped
5 lb turkey legs and thighs
2 tsp vegetable oil
4 1/2 tbsp butter
1 clove garlic, minced
6 oz bacon, chopped finely
1 stalk celery, trimmed, chopped finely
1 1/2 cups dry breadcrumbs
1 None egg
1 tbsp chopped fresh sage leaves
2 tbsp all-purpose flour
2/3 cup cranberry sauce
Preparation

Place onion wedges in a 4.5-quart slow cooker.
Season turkey. Heat oil in a large frying pan over medium-high heat. Working in batches, sear turkey until browned all over. Transfer to slow cooker.
Reduce heat to medium and add 1 1/2 tbsp butter. Cook chopped onion, garlic, bacon and celery, stirring, until bacon is browned. Transfer to a large bowl and let cool slightly. Add breadcrumbs, egg and sage and stir to combine.
Grease 2 (12x16 inch) pieces of foil. Divide bacon mixture between foil sheets and shape each into an 8 inch log. Roll up to enclose then arrange around turkey. Cook, covered, at 300\u00b0F for 8 hours. Remove foil parcels and turkey from cooker. Cover to keep warm.
Strain cooking liquid into a medium measuring cup. Reserve onion. Skim fat from surface. Add enough water to make 2 1/2 cups liquid.
Melt remaining butter in a medium saucepan over medium heat. Cook reserved onion, stirring, until browned. Add flour and cook, stirring, until mixture thickens and bubbles. Gradually add cooking liquid and stir until mixture boils and thickens.
Slice turkey. Serve with gravy, stuffing and cranberry sauce.
