Mini Marzipan Doughnuts - cooking recipe

Ingredients
    200 g marzipan, grated
    150 g butter, softened
    175 g caster sugar
    5 None eggs
    250 g ricotta
    1 1/2 None oranges, grated zest
    5 tbsp orange juice
    50 g plain flour
    100 g ground blanched almonds
    1 tsp baking powder
Preparation
    Preheat oven to 400\u00b0F. Grease a 12-cavity mini doughnut pan. Cream marzipan, butter and 1/3 cup sugar. Add eggs, 1 at a time, then add ricotta and 2/3 of orange zest. Add orange juice. Mix flour, ground almonds and baking powder then fold into marzipan mixture. Transfer to a piping bag and fill prepared pan. Chill remaining batter. Bake doughnuts for 10-12 mins, until a skewer comes out clean. Allow doughnuts to cool in pan for 10 mins.
    Meanwhile, mix remaining sugar and orange zest. Remove doughnuts from pan and toss in orange sugar. Transfer to a wire rack to cool completely. Wash and re-grease pan and repeat until all batter is used.
