Fruit & Nut Logs - cooking recipe
Ingredients

5 oz semi-sweet chocolate
1 cup dried figs, coarsely chopped
3/4 cup dried cherries
1 tsp finely grated orange peel
1/4 cup brandy
2/3 cup unsalted toasted pistachios, coarsely chopped
2/3 cup toasted walnuts, coarsely chopped
1/3 cup candied clementines or orange, finely chopped
1/4 cup finely chopped glace ginger
1/2 tsp ground cinnamon
1/4 tsp mixed spice, such as pumpkin pie spice
2 sheets edible rice paper (9 x 6-inch)
Preparation

Chop half of the chocolate finely. Chop remaining chocolate coarsely; melt in small heatproof bowl over small saucepan of simmering water.
Process figs, cherries, orange peel and half of the brandy until fruit is chopped finely. Transfer mixture to large bowl. Stir in nuts, clementines, ginger, spices, chopped and melted chocolate.
Spoon mixture along long side of each rice paper sheet. Roll each sheet to enclose filling and make a log shape. Pinch along top of each log to make a triangle shape. Brush rice paper with remaining brandy.
Wrap fruit and nut logs in parchment paper. Let stand overnight at room temperature. Serve logs sliced thickly.
