Chocolate Cherry Brownies - cooking recipe

3/4 lb dark chocolate, broken into pieces
1 cup +2 tbsp unsalted butter, cubed
5 medium eggs
1 3/4 cups sugar
1 2/3 cups flour
1 1/2 tsp baking powder
2/3 cup fresh cherries, pitted
1/2 cup pistachios, finely chopped

Preheat the oven to 350\u00b0F. Grease and line a 10 inch square cake pan. To make the batter, place the chocolate and butter in a heatproof bowl set over a pan of simmering water and stir until melted and smooth. Remove from the heat. Place the eggs, sugar and a pinch of salt in a large bowl and beat together with a hand-held electric mixer for 2-3 mins. Sift the flour and baking powder on top and fold it in with a metal spoon. Fold in the melted chocolate mixture.
Pour the batter into the prepared cake pan and sprinkle with the cherries and half the chopped pistachios. Bake for 40-50 mins until just firm to the touch and a skewer inserted into the center of the cake comes out with a few moist crumbs attached. The brownies should be slightly soft in the middle. Cover and cool in the pan then cut into squares and sprinkle with the rest of the pistachios.
