Mustard Roasted Potatoes - cooking recipe

2 lbs potatoes, peeled and cut into large chunks
4 tbsp vegetable oil
2 tbsp all-purpose flour
1 tbsp mustard powder
2 tsp salt flakes

Preheat the oven to 425\u00b0F. Cook the potatoes in a pot of boiling salted water for 10 mins until just tender.
Drain well; return to the pan. Cover with the lid and shake the pan vigorously to roughen up the edges of the potatoes.
Pour the vegetable oil into a roasting pan and place the pan in the oven to preheat.
Mix together the flour and mustard powder. Sprinkle over the potatoes; shake the pan to coat evenly.
Remove roasting pan from the oven and add the potatoes to the hot oil. Tilt the tray and spoon over the hot oil to coat evenly.
Return pan to the oven and roast the potatoes for 40-50 mins, turning occasionally, until golden and crunchy.
Sprinkle with salt, season to taste and serve.
