60 g butter or margarine, melted
150 g flour
1 tsp baking powder
1/2 tsp vanilla extract
1 None medium egg
175 ml buttermilk
3 None small bananas, sliced
3 tbsp sliced almonds
4 tbsp maple syrup
1 tbsp sugar
Preparation

In a bowl, combine the flour, baking powder, buttermilk, vanilla extract, and egg, then beat until it is smooth. Add the sugar, then the melted butter and beat for another 10 mins.
Heat the rest of the butter in a frying pan. To make a 4 inch pancake, put about 2 tablespoons of pancake batter in the pan with a few banana slices and a sprinkle of almonds on top. Cook for about 2 mins on each side, then remove from the pan and keep warm. Serve the pancakes in a stack with the rest of the sliced banana between each layer, then drizzle with the maple syrup.
