Fruit, Ricotta And Almond Parcels - cooking recipe

Ingredients
    12 None sheets phyllo pastry
    12 oz low-fat ricotta cheese
    2 tbsp brown sugar
    15 oz can mixed fruit, drained
    6 oz almond biscotti, crushed
    2 tsp cinnamon sugar
    None None low-fat vanilla yogurt, to serve
Preparation
    Preheat oven to 425\u00b0F. Lightly spray 2 baking sheets with cooking oil and line with parchment paper.
    Place 1 sheet of phylo on a dry surface. Lightly spray with oil. Repeat until there are 4 layers. Make 2 more stacks with remaining phyllo. Cut each stack in half width-wise.
    For the filling, combine ricotta and sugar, blending well. Place an equal amount in the center of each phyllo square, leaving a 3/4 inch border. Divide fruit and biscotti evenly between the squares. Pull corners of squares together to enclose filling, forming a money bag shape. Arrange on baking sheets.
    Lightly spray parcels with oil and sprinkle with cinnamon sugar. Bake for 15-20 mins or until golden brown. Serve with vanilla yogurt.
