Pear And Vanilla Tarte Tatin - cooking recipe

Ingredients
    5 1/2 tbsp butter
    1/3 cup brown sugar
    1 None vanilla bean, split
    1 strip lemon zest
    4 None firm pears, peeled, cored, cut into wedges
    13 oz frozen puff pastry, thawed
    None None ice cream, to serve
Preparation
    Preheat oven to 400\u00b0F. Grease and line the base of 4 - 4 inch pie dishes with parchment paper.
    Melt butter in a frying pan over medium heat. Add brown sugar, vanilla bean and lemon zest. Stir until sugar dissolves. Add pears and simmer for 10 mins, or until starting to soften. Distribute between pie dishes.
    Roll out puff pastry on a floured work surface to 1/8 inch thick. Cut out 4 - 5 1/2 inch rounds then top each pie dish with a round of puff pastry, tucking edges into pie dishes. Transfer to a baking tray and bake for 20-25 mins, or until puffed and golden brown.
    Turn each tart out onto a serving plate. Serve with ice cream.
