Sirloin Steak With Cafe De Paris Butter - cooking recipe
Ingredients

1 cup (2 sticks) butter, chopped, at room temperature
1/2 cup mixed fresh herbs, finely chopped
2 tbsp lemon juice
1 large egg yolk
1 tbsp finely chopped capers
1 None shallot, finely chopped
2 tsp Worcestershire sauce
1 None anchovy, finely chopped
1 tsp curry powder
1 clove garlic, crushed
4 None sirloin steaks (7-8 oz each)
1 tbsp olive oil
None None Mashed potatoes, steamed green beans, to serve
Preparation

For the cafe de paris butter, combine all ingredients except steaks and oil in a medium bowl. Beat with an electric mixer, until pale and combined. Spoon onto a piece of plastic wrap, forming a log shape. Roll up and twist ends. Refrigerate until firm.
Bring steaks to room temperature before cooking. Brush with oil and season to taste.
Preheat grill pan or large skillet on high heat. Cook steaks 4 mins each side for medium-rare, or cook to desired doneness.
Place steaks on serving platter. Top each steak with a slice of the butter. Let stand, loosely covered with foil, 5 mins. Serve with mash potatoes and beans.
