Mozzarella Bites With Caper Sauce - cooking recipe

Ingredients
    12 slices baguette
    6 slices mozzarella
    2 None eggs
    2 tbsp fresh parsley leaves, chopped
    2 tbsp oil
    1 tbsp butter
    1 clove garlic, minced
    1 tbsp chopped capers
    1 tbsp chopped anchovies
    1 tbsp chopped pitted kalamata olives
    1/2 cup dry white wine
    None None salad, to serve
Preparation
    Top 6 slices of bread with mozzarella then sandwich with remaining bread.
    Beat eggs lightly in a shallow bowl along with 1 tbsp parsley. Dip sandwiches into egg mixture to coat.
    Heat oil and butter in a large frying pan over medium-high heat. Carefully cook sandwiches for 2-3 mins per side, until golden. Set aside and keep warm.
    Add garlic, capers, anchovies and olives to pan and cook for 1 min. Add wine and bring to a boil. Simmer for 1 min, until slightly reduced. Add remaining parsley and season.
    Drizzle caper sauce over sandwiches. Serve with salad.
