Caramelized Leeks And Carrots - cooking recipe

Ingredients
    1 1/3 lbs (about 5 large, or 8 medium) carrots, trimmed and diagonally sliced
    2 None leeks, trimmed and diagonally sliced
    3 tbsp butter
    3 tbsp fresh thyme leaves
    1 tbsp brown sugar
    2 tbsp white wine vinegar
Preparation
    Blanch the carrots in a pan of boiling, salted water for 2-3 mins then drain. Heat the butter in a non-stick skillet, add the carrots, leeks and thyme and saute for 4-5 mins. Sprinkle with sugar and leave to caramelize for 1-2 mins then deglaze the pan with vinegar and season. Serve.
