Seared Salmon With Leeks And Yellow Pepper - cooking recipe

Ingredients
    2 tbsp oil
    1 None onion, peeled and finely diced
    1 None yellow pepper, deseeded and diced
    2 None leeks, sliced
    1/2 cup sour cream
    None Pinch sugar
    4 None salmon fillets (about 4 1/2 oz each), skinned
    None None Paprika, to taste
Preparation
    Heat 1 tbsp oil in a frying pan and fry the onion and pepper for 2 mins. Add the leeks, sour cream and pinch of sugar and season to taste. Simmer for 4 mins.
    Season the salmon. Heat 1 tbsp oil in a separate frying pan and cook the fish, turning, for 5 mins.
    Add paprika to the vegetables to taste and spoon on to serving plates. Top with the fish and sprinkle with paprika.
