Sweet And Sour Pork - cooking recipe

Ingredients
    1 None egg, lightly beaten
    1/3 cup flour
    1 cup plus 1 tsp vegetable oil
    1 lb pork tenderloin, diced
    1 can (8 oz) pineapple rings, drained and diced
    1 None green or red pepper, seeded and cut into chunks
    3/4 cup chicken stock
    1/4 cup white vinegar
    2 tbsp honey
    2 tsp soy sauce
    1 tbsp cornstarch
    None None Steamed rice, to serve
Preparation
    Place egg, flour, 1 tsp oil and 1/4 cup water in a large bowl. Mix to a smooth batter. Add pork and stir to coat well.
    Heat 1 cup oil in a wok on high heat (a cube of bread sizzles on contact). Cook pork, in batches, for 4 mins, or until lightly golden. Drain on paper towels. Reheat oil and re-fry pork in batches until crisp and golden brown. Drain on paper towels.
    Drain off all but 1 tbsp oil. Reheat on high heat. Add pineapple and pepper and stir-fry for 3 mins, or until pepper is tender. Add stock, vinegar, honey and soy sauce and bring to a boil.
    Mix cornstarch with 1/4 cup water. Add to wok; bring to a boil and stir until sauce thickens slightly. Fold in pork and reheat gently. Serve with steamed rice.
