Deep-Fried Shrimp With Dipping Sauce - cooking recipe

None None FOR THE DIPPING SAUCE
2/3 cup mayonnaise
1 1/2 tbsp Japanese pickled cucumber, finely chopped
1 tbsp rice vinegar
1 None green onion, white part only, finely chopped
2 tbsp finely chopped fresh flat-leaf parsley
1 clove garlic, crushed
None None FOR THE SHRIMP
1/4 cup sesame oil
None None Vegetable oil, for deep-frying
1/4 cup flour
1/4 tsp salt
1/4 tsp white pepper
1 None egg
20 None jumbo shrimp, peeled and deveined, tails intact
1 cup panko breadcrumbs
1 None lemon, cut into wedges
Preparation

For the dipping sauce, combine ingredients in small bowl. Refrigerate until ready to serve.
For the shrimp, place sesame oil in medium saucepan and top up with enough vegetable oil to deep-fry. Heat oils.
Combine flour, salt and pepper in a shallow bowl. Lightly beat egg with 2 tsp water in small bowl. Working with one shrimp at a time, hold it by the tail (being careful not to coat the tail) and lightly coat with seasoned flour; shake away excess. Dip shrimp in egg mixture, then in breadcrumbs. In batches, deep-fry shrimp until golden. Drain on paper towels.
Serve shrimp with dipping sauce and lemon wedges.
