1 None large egg
1 cup sugar
2 tsp vanilla extract
1/2 cup milk
3 1/2 tbsp butter, melted
2 1/3 cups flour, sifted
2 tsp baking powder
2/3 cup powdered sugar
None None assorted colored sprinkles, to decorate

Using an electric mixer, beat egg, sugar and 1 tsp vanilla in a small bowl until creamy. Stir in milk and half the butter. Stir in combined flour and baking powder to form a soft dough. Cover with cling wrap and chill for 30 mins.
Preheat oven to 400\u00b0F. Line a large baking sheet with parchment paper. Knead dough gently on a lightly floured surface then pat to 1/4 inch thickness. Using a 2 inch diameter floured pastry cutter, cut dough into 16 circles. Using a 1 inch cutter, cut out the center of each. Place doughnuts and centers on prepared sheet and bake for 12-15 mins, or until golden brown.
For the icing, combine powdered sugar, remaining vanilla and 1 1/2-2 tbsp boiling water in a medium heatproof bowl to make a runny glaze. Dip doughnuts into warm glaze and decorate with sprinkles. Allow to set on a wire rack before serving.
