Chicken Sausages With Apple Salad - cooking recipe

Ingredients
    1 small red onion, thinly sliced
    1 tbsp cider vinegar
    3 tbsp butter, melted
    2 cloves garlic, crushed
    2 tbsp finely chopped flat-leaf parsley
    2 None ciabatta rolls, halved horizontally
    1 pkg (12 oz) chicken sausage
    3 oz baby spinach leaves
    2 small Granny Smith apples, cored, unpeeled, cut into matchsticks
    1/4 cup chopped pecans, toasted
    2 tbsp pumpkin seeds, toasted
    1 tbsp vegetable or olive oil
    None None Barbecue sauce, to serve
Preparation
    Combine onion and vinegar in a large bowl. Season with salt and pepper. Set aside.
    Place butter, garlic and parsley in a small bowl; mix well. Brush bread with butter mixture. Spray skillet with no stick cooking spray. Heat on medium-high heat. Add sausages; cook and turn for 7-8 mins or until cooked through. Transfer to a plate. Add bread to pan; cook for 1-2 mins or until toasted.
    Add spinach, apples, pecans and pumpkin seeds to onion mixture. Drizzle with oil. Toss to combine. Top with sausages and drizzle with barbecue sauce. Serve salad with bread.
