Fennel And Garlic Roasted Pork Ribs - cooking recipe

Ingredients
    1/3 cup tomato paste
    1/4 cup olive oil
    1/4 cup sherry vinegar
    1 tbsp fennel seeds
    1 tbsp brown sugar
    4 cloves garlic, crushed
    2 tsp smoked paprika
    2 racks pork spare ribs (1 lb each)
    None None Lemon wedges, to serve
Preparation
    Combine tomato paste, oil, vinegar, seeds, sugar, garlic and paprika in shallow dish. Reserve 1/4 cup of the marinade. Add pork to remaining marinade; turn to coat. Cover; refrigerate 1 hour.
    Preheat the oven to 250\u00b0F. Place pork on oiled wire rack in large roasting pan. Cover with foil. Roast for 2 hours.
    Increase oven temperature to 350\u00b0F. Brush pork with reserved marinade. Roast, uncovered, for 45 mins, or until tender.
    Slice ribs between the bones. Serve with lemon wedges.
