Grilled Lamb With Orzo Salad - cooking recipe

Ingredients
    1 tbsp oil
    1 tbsp finely chopped mint
    2 tsp honey
    1 None long red chili pepper, finely chopped
    1 lb boneless lamb loin roast
    None None Grilled tomatoes, arugula leaves, to serve
    None None FOR THE ORZO SALAD
    1 cup orzo
    1/3 cup chopped parsley
    1/3 cup pine nuts, toasted
    1/2 small red onion, thinly sliced
    1/4 cup raisins
    2 tbsp olive oil
    1 tbsp lemon juice
Preparation
    Mix oil, mint, honey and chili pepper in a large bowl. Add lamb, tossing to coat. Cover and refrigerate for 2 hours.
    For the orzo salad, cook orzo in boiling salted water according to the package directions. Drain and rinse under cold water. Shake off excess water and transfer orzo to a bowl. Stir in remaining ingredients. Season to taste.
    Preheat grill to medium-high. Grill lamb for 3-4 mins each side or until cooked to desired doneness. Transfer to a plate, cover with foil and let stand for 5-10 mins.
    Slice lamb and serve on a bed of orzo salad with grilled tomato and arugula leaves.
