Za'Atar-Grilled Lamb With Fattoush - cooking recipe

Ingredients
    1 clove garlic, crushed
    1 tsp sweet paprika
    1 tbsp sumac
    1 tsp finely chopped fresh oregano
    1 tbsp olive oil
    1 3/4 lbs lamb loin
    None None FOR THE FATTOUSH
    2 small cucumbers, seeded and coarsely chopped
    3 medium tomatoes, seeded and coarsely chopped
    5 None red radishes, trimmed and thinly sliced
    3 None green onions, thickly sliced
    1 cup coarsely chopped fresh flat-leaf parsley
    1 cup coarsely chopped fresh mint
    1 None baby Romaine lettuce, torn
    2 tbsp sumac
    1/3 cup lemon juice
    1/4 cup olive oil
    1 None pita, split and toasted
Preparation
    Combine garlic, paprika, sumac, oregano, 1 tbsp water and oil in medium bowl. Add lamb; turn to coat in mixture.
    Cook lamb on heated oiled grill pan (or on the grill) until browned both sides and cooked to desired doneness. Cover lamb; let stand for 10 mins then slice thickly.
    Meanwhile, for the fattoush, combine cucumber, tomato, radish, onion, herbs and lettuce in large bowl. Whisk sumac, lemon juice and oil in small bowl. Pour dressing over salad; toss gently. Break pita into small pieces over salad just before serving.
    Serve lamb with fattoush.
