Patatas Bravas With Chorizo And Aioli - cooking recipe

Ingredients
    10.5 oz frozen potato cubes or wedges
    1 tbsp vegetable or olive oil
    1 None chorizo sausage, quartered lengthwise, thickly sliced
    1/2 None small red onion, finely chopped
    2 cloves garlic, 1 thinly sliced, 1 crushed
    1 tsp smoked paprika
    1 x 14 oz can diced tomatoes
    None None Dried chili flakes, to taste
    2 tbsp mayonnaise
    2 tsp lemon juice
    2 tbsp flat-leaf parsley. coarsely chopped
    None None Crusty bread, to serve
Preparation
    Preheat oven to 425\u00b0F. Line a baking sheet with parchment paper. Place potato on prepared sheet. Drizzle with half the oil; toss to coat. Bake for 25 mins or until golden and crisp.
    Meanwhile, heat remaining oil in a medium frying pan over moderately high heat. Add the chorizo and onion; cook and stir for 5 mins or until onion softens. Add sliced garlic and paprika to pan; cook and stir for 30 seconds or until fragrant. Add tomato and chili flakes and bring to a boil. Reduce heat. Simmer, uncovered, for 10 mins or until mixture thickens slightly.
    To make aioli, combine crushed garlic, mayonnaise and juice in a small bowl. Season to taste.
    Add potato and parsley to tomato mixture and gently toss. Serve with aioli and crusty bread.
