Potato Skins - cooking recipe

Ingredients
    5 None potatoes, scrubbed, cut into wedges
    1/4 cup oil
    1 oz Cheddar cheese, grated
    None None Salsa
    1 None avocado, finely chopped
    2 oz roasted red peppers, drained, finely chopped
    1 None spring onion, finely sliced
    1 None lime, juiced
    1 1/4 cups sour cream, to serve
    1/4 cup sweet chili sauce, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking dish with foil.
    Using the tip of a knife, slice potato away from flesh, leaving a little potato on skin. Coat in oil and season. Place, skin-side up, on a wire rack in the baking dish. Bake for 20-25 mins, until browned and crisp. Turn over and sprinkle with cheese.
    Increase oven to 425\u00b0F. Bake potato skins for another 4-5 mins, until cheese melts.
    Meanwhile, to make the salsa, combine all salsa ingredients. Set aside.
    Combine sour cream and chili sauce in a bowl. Set aside.
    Serve potato skins with salsa and sour cream mixture.
