Ingredients

1/4 cup milk
1 tbsp instant coffee granules
32 None plain coffee-flavored wafer cookies
1 tbsp cocoa powder, plus 2 1/2 tablespoons extra, to dust
1/3 cup cream cheese, at room temperature
3 tbsp unsalted butter, at room temperature
1 cup powdered sugar
Preparation

Heat milk and coffee in a saucepan until lukewarm. Transfer to a heatproof bowl. Dip cookies lightly, one by one, into coffee mixture, then arrange 8 cookies on a serving plate to form an 8 x 6 inch rectangle. Sprinkle with a little of the cocoa powder. Repeat using remaining cookies, milk mixture and remaining cocoa powder to make 4 layers in total.
Using an electric mixer, beat cream cheese and butter in a bowl until very light and creamy. Beat in combined sifted powdered sugar and 2 tablespoons of the extra cocoa powder until combined. Spread over top of cake. Chill for 15 minutes.
Serve cookie cake dusted with remaining extra cocoa powder.
