Hearty Sausage Frittata - cooking recipe
Ingredients

1 None potato, peeled and chopped
2/3 lb cauliflower, cut into florets
2/3 lb pumpkin, peeled, de-seeded and chopped
6 None large eggs
1/4 cup milk
3 oz Cheddar cheese, grated
4 None green onions, thinly sliced
1 tbsp vegetable oil
1 lb lamb sausages with herbs
None None toasted bread and mixed greens, to serve
Preparation

Steam the potatoes, cauliflower and pumpkin over a saucepan of boiling water 8 mins or until just tender. Whisk the eggs, milk, cheese and onions in a bowl. Season.
Preheat broiler to high. Heat the oil in a 2 x 10 inch round ovenproof frying pan over medium heat. Add the sausages. Cook about 8 mins, turning, until cooked through. Remove from the pan and slice thickly. Return to pan and reduce the heat to low. Add the steamed vegetables and stir to combine. Pour in the egg mixture, stir, cover and cook 10 mins or until almost set. Remove the lid, transfer to the oven and broil 2 mins until golden and set. Serve with the bread and mixed greens.
