Mixed Berry And Chicken Salad - cooking recipe

Ingredients
    1 tbsp olive oil
    2 small boneless skinless chicken breasts, trimmed
    4 oz baby spinach leaves
    1 cup raspberries
    3/4 cup blueberries
    1 1/4 cups crumbled feta cheese
    1/2 cup loosely packed mint leaves
    1 small red onion, thinly sliced
    1/4 cup sliced almonds, toasted
    None None FOR THE DRESSING
    1 cup strawberries, hulled and chopped
    2 tbsp apple cider vinegar
    2 tbsp olive oil
    1 tsp honey
    1 tsp Dijon mustard
Preparation
    Heat oil in a large skillet on high heat. Cook chicken for 4-5 mins, each side, until browned and cooked through. Cool and slice thinly.
    Toss chicken with remaining ingredients, except almonds, in a large bowl.
    For the dressing, place all ingredients in a food processor or blender. Process until smooth. Season to taste. Drizzle dressing over salad just before serving. Sprinkle with almonds.
