Piri Piri Shrimp - cooking recipe

Ingredients
    1/3 cup olive oil
    1/4 cup cilantro, leaves picked, plus more leaves, to serve
    1/4 cup parsley, leaves picked
    None None Juice and grated zest of 1 lemon
    8 None red chilies
    4 None garlic cloves, roughly chopped
    1/2 inch piece ginger, peeled and roughly chopped
    1 lb large raw shrimp, peeled, heads and tails intact
    8 None soaked bamboo skewers
    None None Lemon wedges, to serve
Preparation
    In a food processor, combine oil, herbs, zest, juice, chilies, garlic, and ginger. Process to a smooth paste. Season to taste.
    In a medium bowl, combine 1/4 of the paste with shrimp. Place the remaining paste in a serving bowl. Marinate shrimp for at least 30 minutes.
    Thread 3-4 prawns onto 2 skewers (through head and tail), so you can use skewers as handles to turn shrimp.
    Heat an oiled outdoor grill or indoor grill pan to medium. Cook shrimp 2-3 minutes each side, until just cooked through. Serve scattered with more cilantro. Accompany with remaining sauce and lemon wedges.
