Cream Of Porcini Soup - cooking recipe

Ingredients
    1 1/2 tbsp butter
    1 None onion, diced
    1/2 cup white wine
    1/2 oz dried porcini mushrooms, soaked in 2 cups warm water for 30 mins
    3-4 tbsp cornstarch, mixed with 4 tbsp water to make a slurry
    1 cup heavy cream
    1 tbsp chive snippets
    1/2 cup Parmesan cheese, grated
Preparation
    Heat the butter in a saucepan, add the onions and saute for 4-5 mins. Pour in the wine and bring to a boil. Add the porcini and soaking liquid to the pan. Bring to a boil. Add the cornstarch slurry and heavy cream to the pan. Simmer, stirring, until the sauce thickens. Season. Blend the soup until smooth using an immersion blender. Divide between 4 bowls and sprinkle with chives and Parmesan cheese.
