Chicken Skewers With Tomato Salad - cooking recipe

Ingredients
    1/4 cup olive oil
    1 None lemon, zested and juiced
    2 tsp ground coriander
    2 cloves garlic, minced
    1 1/4 lb chicken thigh fillets, cubed
    1 None red onion, halved, 1/2 finely chopped, 1/2 cubed
    1 tbsp red wine vinegar
    3 None tomatoes, sliced
    1 oz pitted olives
    3 tbsp fresh parsley leaves
    1/4 cup mayonnaise
Preparation
    In a shallow dish, combine 1 tbsp olive oil, lemon zest, lemon juice, coriander and garlic. Add chicken and season to taste. Cover and marinate for 10 mins.
    Combine finely chopped onion and vinegar in a bowl. Set aside.
    Preheat grill. Thread cubed onion onto 8 soaked bamboo skewers alternately with chicken. Cook skewers for 8-10 mins, turning, until cooked through.
    Meanwhile, combine tomatoes, olives, onion mixture and parsley. Add remaining oil and season. Serve skewers with tomato salad and mayonnaise.
