Cheese And Onion Dumplings With Cabbage And Bacon - cooking recipe

7 oz white bread, crust removed, cubed
1/2 cup milk, lukewarm
1 1/2 tbsp butter
1 None onion, peeled, finely chopped
2 tbsp all-purpose flour
2 None eggs, beaten
2 tbsp cottage cheese
1 bunch fresh chives, chopped, a little set aside for garnish
3.5 oz Cheddar cheese, grated, a little set aside for garnish
1 tbsp oil
1 head cabbage, chopped
Preparation

Combine bread and lukewarm milk. Set aside for 30 mins, to soak.
Meanwhile, heat butter in a large frying pan. Cook onion, stirring, for 2 mins. Set aside to cool.
Dust soaked bread with flour. Add eggs, cottage cheese, chives, cooked onion and cheese and mix until combined. Season. Set aside for 30 mins.
Heat oil in a frying pan. Cook bacon, stirring occasionally, for 2-3 mins. Set aside.
Form bread mixture into dumplings. Cook in salted boiling water for 10 mins. Remove with a slotted spoon and drain on paper towels.
Meanwhile, blanch cabbage in salted boiling water for 3-4 mins. Drain then add to pan along with bacon. Return to heat and cook, stirring, for 1 min. Serve with dumplings. Garnish with reserved cheese and chives.
