Cabbage Tart Tatin - cooking recipe

4 1/2 tbsp butter
6 None shallots, peeled, sliced
1/4 cup granulated sugar
2 tbsp white wine vinegar
1/2 None green cabbage, trimmed, cut into 6-8 wedges
2 sheets frozen puff pastry, thawed
Preparation

Preheat oven 425\u00b0F.
Melt butter in a 10 inch ovenproof frying pan. Saute shallots for 3-4 mins, until golden. Add sugar and vinegar, stirring to dissolve. Season to taste. Arrange cabbage in frying pan, covering base evenly. Cook over low heat for 15-20 mins, without stirring, until underside begins to caramelize and excess liquid evaporates. Let cool slightly.
Overlap pastry sheets slightly and trim into a circle. Cover pan with pastry, tucking edges underneath cabbage. Prick with a fork and bake for 20-25 mins, until pastry is puffed and golden brown. Turn out onto a cutting board and cut into wedges. Serve immediately.
