Onion And Fennel Fish Parcels - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 bunch spring onions, thinly sliced
    1 None medium fennel bulb, thinly sliced, tops reserved
    2 tbsp butter
    2 clove garlic, crushed
    4 None skinless white fish fillets, about 1/3 lb each
    1/2 tsp fennel seeds
    1 None medium lemon, thinly sliced
    None None mixed greens, to serve
Preparation
    Heat the oil in a medium saucepan over medium-low heat. Add the onion and fennel and saute until soft. Add the butter and garlic and stir over medium heat for 5 mins or until creamy. Season to taste.
    Preheat the oven to 375\u00b0F. To assemble, spread the onion mixture in the center of 4 pieces of parchment paper (16 x 12 inch). Top with the fish and season. Sprinkle with fennel seeds, then top with the lemon slices. Close the paper around the fish and fold it under. Transfer the parcels to a baking sheet. Bake for 10-15 mins or until the fish is just cooked. Open the paper and sprinkle with the reserved fennel tops. Serve with the mixed greens.
