Herb And Tomato Fish Bundles - cooking recipe

Ingredients
    4 (3.5 oz) firm white fish fillets
    4 oz cherry tomatoes, halved
    1 tbsp rinsed, drained baby capers
    4 sprigs fresh thyme
    2 tbsp white balsamic vinegar
    1 tsp olive oil
Preparation
    Preheat oven to 400\u00b0F. Make 4 (8 inch) squares of parchment paper or foil.
    Distribute fish, tomatoes, capers, thyme, vinegar and oil between squares of parchment. Gather corners together above fish and twist to enclose securely. Place on a baking tray and roast for 15 mins. Let rest for 5 mins before serving.
