Mie Bakso - Indonesian Meatballs - cooking recipe

Ingredients
    6 tbsp canola oil
    2 None onions, chopped
    1/2 cup fresh ginger, finely chopped
    5 cloves garlic, minced
    1 None red chili, deseeded and finely chopped
    1 lb ground beef
    1 tsp ground coriander
    3/4 lb carrots, cut into thin strips
    1 lb cabbage, shredded
    8 cups chicken stock
    1 bunch fresh cilantro, roughly chopped
    5 tbsp soy sauce
    12 oz cellophane noodles
    None None fried onion rings, to garnish
Preparation
    Heat 2 tbsp oil in a large saucepan, add onions and saute for 3 mins. Add ginger, garlic and chili and saute for 1 min. Mix 1/2 the mixture with ground beef, coriander and season. Shape into small meatballs then sear in remaining oil until golden brown.
    Meanwhile, add carrots, cabbage and stock to remaining mixture. Bring to a boil then simmer for 5 mins. Add seared meatballs and simmer for 2 mins. Add cilantro and soy sauce and remove from heat.
    To serve, cook noodles in boiling salted water according to package directions. Drain then add to soup. Ladle into bowls and garnish with fried onion rings.
