Ingredients

2 medium onions, cut into wedges
2 lbs mixed chicken thighs and drumsticks
1 tbsp olive oil
1 1/4 cups chicken stock
1 jar (12 oz) orange marmalade
1 tbsp fresh thyme
1 small orange, halved and sliced

Preheat the oven to 400\u00b0F. Place the onion wedges and chicken in a large roasting pan. Drizzle with olive oil. Season with salt and freshly ground black pepper. Bake for 25 mins until chicken is golden.
Bring stock to a simmer in a medium saucepan. Add the marmalade and stir until well mixed and the marmalade has dissolved. Season with salt and freshly ground black pepper. Stir in the thyme and orange slices.
Remove the chicken from the oven. Pour the marmalade mixture over the top. Bake for a further 25 mins until the sauce has reduced and the chicken is cooked through.
