Thai Green Shrimp Curry - cooking recipe

Ingredients
    2 tbsp Thai green curry paste
    1 lb large shrimp, peeled and deveined, tails intact
    5 oz snow peas, trimmed and halved
    1 lb gai lan (Chinese broccoli), cut into 2-inch pieces
    2 tsp fish sauce
    1 can (14 oz) coconut milk
    None None Thai basil leaves, to serve
Preparation
    Cook the curry paste in a large deep skillet on medium heat, stirring, for about 1-2 mins.
    Add the shrimp, vegetables, fish sauce, 1/2 cup water and coconut milk; bring to a boil, stirring. Reduce the heat to low; simmer, uncovered, for about 5 mins, or until the shrimp change color and the sauce thickens.
    Serve sprinkled with basil.
