Grilled Cod With Mango Salsa - cooking recipe

Ingredients
    2 tbsp chopped fresh cilantro leaves
    1 None lime, juiced
    1 tbsp olive oil
    1 clove garlic, crushed
    6 None skin-on cod fillets

    1 None mango, peeled, stoned, finely chopped
    2 tbsp fresh cilantro leaves, roughly chopped
    1 None small shallot, finely sliced
    2 None bird's-eye chilies, finely chopped
    2 tsp olive oil
    1 tsp red wine vinegar
    1/2 tsp sugar
Preparation
    In a small bowl, combine cilantro, lime juice, oil and garlic. Add the fish, turning to coat. Marinate, covered, in the fridge for 20 mins.
    In a small bowl, combine all the salsa ingredients.
    Preheat a grill on high. Cook fish for 3-4 mins each side, until flesh flakes easily when tested with a fork. Serve with the salsa.
