Ham, Cheese And Veggie Fritters - cooking recipe

Ingredients
    2 cups self-rising flour
    1/4 tsp baking soda
    1 1/2 cups milk
    1 None egg
    2 tbsp butter, melted
    2 oz shaved ham, finely chopped
    1/2 cup canned corn kernels
    1 small carrot, finely grated
    1 small zucchini, finely grated
    1 cup crumbled feta cheese
    1/2 cup grated Cheddar cheese
    None None Vegetable oil, to grease
    None None Mixed salad, to serve
Preparation
    Sift flour and baking soda into a large bowl. Whisk milk, egg and butter in a medium bowl. Add to flour mixture. Stir until just combined. Add ham, corn, grated vegetables and cheeses; mix well.
    Heat a large nonstick skillet on medium heat. Brush with a little oil to grease.
    For each patty, spoon 1/3 cup batter into pan. Cook, 2 at a time, for 1-2 mins, or until golden underneath and bubbles appear on surface. Turn; cook for a further 1-2 mins, or until golden.
    Transfer patties to a heatproof plate. Cover with foil to keep warm. Serve with salad.
