Turkey And Lemongrass Spring Rolls - cooking recipe

Ingredients
    2 tsp oil
    1 lb ground turkey
    2 stalks fresh lemongrass, trimmed, chopped
    2 None spring onions, finely chopped
    1 tbsp fresh mint leaves, finely chopped
    2 tbsp sweet chili sauce, plus extra to serve
    1 tbsp fish sauce
    1 None lime, zested and juiced
    1 clove garlic, minced
    18 sheets rice paper
    1/2 head iceberg lettuce, shredded
Preparation
    In a large nonstick wok or frying pan, heat oil over high heat. Stir-fry turkey and lemongrass for 5-7 mins, until browned and cooked through. Let cool then mix with onions, mint, chili sauce, fish sauce, lime zest, lime juice and garlic.
    Working with 1 sheet at a time, dip rice paper into warm water until softened slightly. Transfer to a clean work surface, top with lettuce and filling. Fold over sides and roll up to enclose. Repeat with remaining rice paper and filling.
    Serve with extra sweet chili sauce for dipping.
