Ham, Zucchini And Corn Bread - cooking recipe

Ingredients
    1/2 cup self-rising flour
    1 tsp baking powder
    1/2 tsp salt
    3/4 cup polenta, plus 2 tsp extra
    4 oz grated aged Cheddar cheese
    2 oz finely grated zucchini
    1/2 cup canned corn, drained
    1 None spring onion, thinly sliced
    2 None large eggs, at room temperature
    3/4 cup milk
    1/2 cup butter, melted
    3.5 oz shaved ham
Preparation
    Preheat oven to 350\u00b0F. Grease and line an 8x4 inch loaf pan with parchment paper.
    Sift flour, baking powder and salt into a bowl. Add polenta, cheese, zucchini, corn and onion. Make a well in the center. Whisk eggs, milk and butter together then pour into flour mixture. Gently fold until just combined. Distribute 1/2 of the batter between prepared recesses. Top with ham. Pour remaining batter over top. Sprinkle with extra polenta. Bake for 40-45 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool.
    Cut into slices to serve.
